About Names and Dish Types
What is the difference between kabsa and majboos?
Essentially the same dish under different regional names. Majboos (or machboos) is the name in the UAE, Kuwait and Bahrain. Kabsa is the name used in Saudi Arabia. Both are rice cooked in a meat broth with tomatoes, whole spices and dried lime. Small differences in spice blends exist by region but the character is the same dish.
What is the difference between majboos and mandi?
The main difference is how the meat is cooked. In mandi, the meat is slow-cooked with steam over embers - or at home, over charcoal inside the oven - which gives a smoky depth absent from majboos. In majboos the meat is simmered or browned and added directly to the rice.
What is the difference between maqlouba and biryani?
Maqlouba is a Levantine dish - Palestinian and Jordanian - where rice, vegetables and meat are cooked in layered formation then inverted. Biryani is from the Indian subcontinent, relying on pre-marinated meat cooked by the dum (sealed steam) method with very different spices. Both are loved in Arab homes but their roots are distinct.
Cooking Problems and Solutions
Why does the rice clump after cooking?
The most common cause is stirring the rice while it cooks, which breaks grains and releases excess starch. Other causes: no prior soaking, too much water, or lifting the lid before the steam has finished its work. Fix: soak 20-30 minutes, stir only once when adding the rice to the broth, and keep the lid sealed under a folded cloth.
Why does the base of the pot burn?
Three reasons: heat too high after the first boil, a thin-based pot that distributes heat unevenly, or simple inattention. Fix: reduce to the lowest possible heat after the first boil. If your pot is thin, place a heat diffuser directly between the pot and the flame.
How do I know the rice is done without opening the lid?
Three signs together: steam has stopped escaping from the lid edges, the damp patch on the cloth covering has stopped spreading, and if you hold the pot you hear a faint grain-on-pot sound rather than bubbling. When all three signals appear, the rice is ready.
Water Ratios and Rice Types
What is the correct water ratio for basmati?
One and a half cups of water or broth per cup of soaked basmati. Without prior soaking: two cups. Short-grain Egyptian rice or calrose needs slightly more: two to two and a quarter cups per cup.
What is the difference between Egyptian and basmati rice in Arabic dishes?
Basmati: long slender grains that stay separate after cooking. Best for kabsa, majboos and Gulf rice dishes. Egyptian short-grain: absorbs more, holds together. Best for mahashi stuffings, maqlouba and doughy rice preparations.
Can Arabic rice be cooked without soaking?
Yes, with adjustments: add an extra quarter cup of water and extend cooking by 7-8 minutes. Soaked rice produces fluffier, less brittle grains. For mahashi stuffings, prior soaking is near-essential because the rice completes its cooking inside the vegetables.
Storage and Reheating
Can Arabic rice be reheated without drying out?
Yes, two methods. Steam method: place rice in a sieve over simmering water, cover and steam 5-7 minutes. Microwave method: drizzle a tablespoon of water over the rice and cover the bowl tightly before heating.
How long can cooked rice be stored?
Three days maximum in the refrigerator. One month in the freezer in airtight containers. Rice must cool completely before going into the fridge - never store hot rice.
Mahashi Stuffings
Is mahashi rice different from kabsa rice?
Yes. Short-grain rice - Egyptian or calrose - is used for mahashi because it absorbs liquid and binds together inside the vegetable. Basmati stays separate and can cause the stuffing to fall apart after cooking. Simple rule: basmati for kabsa and Gulf rice; short-grain for all stuffed dishes.
How full should I stuff zucchini?
Fill to only 70-75% of the cavity. Rice swells to roughly one and a half times its raw volume during cooking. Stuffing to the opening causes the zucchini to split as the rice expands. One tablespoon of rice-and-meat stuffing per medium courgette is the standard amount.
Frequently Asked Questions
What is the difference between Kabsa and Majboos?
Essentially the same dish under regional names: Majboos in the UAE and the Lower Gulf, Kabsa in Najd and the Hejaz.
Why does the rice clump together?
Over-stirring during cooking releases the starch. The fix: pre-soak, stir only once, and a tight lid.
What is the water-to-rice ratio for basmati?
One and a half cups of water per cup of soaked rice. Two cups without soaking.
Why does the bottom of the pot burn?
High heat after boiling or a thin-bottomed pot. Lower the heat to its minimum and place a wire trivet under the pot.
Is Mahshi rice different from Kabsa rice?
Yes. Mahshi rice is a shorter grain (Egyptian or Calrose) that absorbs more and holds together. Basmati stays as separate grains and may cause the stuffing to fall apart.
Can Arabic rice be reheated a second time without drying out?
Yes, by steaming: place the rice in a sieve over a pot of boiling water and cover it for 5-7 minutes. Or sprinkle a tablespoon of water and reheat it in the microwave with the bowl covered.
